Katherine and I chose one fun thing we could do to help lift our spirits while Aaron is in the Solomon Islands: Food Truck Friday.
The first place we tried was Afrobites. The family is from Senegal, and according to Katherine, their coconut rice is exactly right!
We split a curried chicken over coconut rice with fried plantains and curried cabbage on the side. Absolutely delicious :)
