Angel Dream Cake


We get one more shot at all of the luscious summer fruits the United States have to offer.  I envision lots of creating in the kitchen before we go homeless for our seven week Summer 2013 Road Trip to visit churches, supporters, and family around the Southeastern United States.
 
 

I found this recipe for Angel Dream Cake on Susan Branch's blog.  I love her sweet spirit and her lovely artwork!
 


Angel Dream Cake

You need:
 a 10" tube pan
1 cup + 2 Tbsp cake flour
1 1/2 cups sugar (separated)
1 dozen egg whites, about 1 1/2 cups (room temperature)
1 1/4 tsp cream of tartar
1/2 tsp salt
zest of one lemon
1 tsp vanilla extract
1 1/2 cups fresh or frozen blueberries (thawed and drained)
Lemon glaze
 
 
Preheat oven to 375 degrees.  Roughly measure out flour and sift twice; remove excess, sift three more times with 1/2 cup sugar and set aside.  Put egg whites in a large bowl.  Beat with mixer until foamy, add cream of tartar and salt and beat until soft peaks form.  Gradually add 1 cup of sugar; beat until stiff peaks form.
 


Sift flour mixture over egg whites a little at a time; fold gently along with zest.  Fold in vanilla and blueberries.  Pour batter into ungreased tube pan; spread evenly with scraper.  Break up air pockets by weaving a knife through the batter.  Bake 40 minutes until cake springs back when lightly touched. 
 
 
Cool pan upside down on rack.  (Or you can follow our lead and stick the cake in the deep freeze because we are so impatient to eat it.)  When completely cool, run a knife around inside edge of pan and turn out onto cake plate.


Lemon Glaze
When cake is cool, drizzle over a mixture of 1 cup sifted powdered sugar combined with 3 Tbsp freshly squeezed lemon juice.  Cut cake with serrated knife.  Serves 8-10.
 
 
Last night was so beautiful, we decided to enjoy the cake and the sunset together outside.  God's creation, sweet treats, and the fabulous Choate Team with whom to share these remarkable gifts.
