Yesterday morning while Aaron and I tackled our daily 5K (one day, I WILL run the whole thing!), Benjamin baked these delicious and healthy muffins for our family.  One of the things I'm looking forward to here in America is being a better steward of my body.  We're hoping to participate in more races as a family and be more aware of what we are putting in our bodies.  Please help us by asking how we're doing, racing with us, and not serving us too much ice cream (no matter how much we beg!).



Double Berry Muffins

1/4 cup brown sugar
1/2 tsp cinnamon
1 cup skim milk
1/4 cup applesauce
2 TBSP oil
1/2 tsp vanilla
1 egg
2 cups flour
1/3 cup sugar
3 tsp baking powder
1/2 tsp salt
1 cup frozen fruit (fresh blueberries work well, too)

Heat oven to 400 degrees.  Prepare 12 muffins tins.  Mix brown sugar and cinnamon and set aside.  Beat milk, applesauce, oil, vanilla and egg with a whisk.  Stir in flour, sugar, baking powder and salt until moist.  Fold in berries.  Divide among muffin cups and top with brown sugar mixture.  Bake 20-25 minutes or until brown.

Good for you! I'll be cheering you on as I work on running a 5k, too. But I'm no where near running the whole thing!

As for running/walking... we need to schedule a race or two together friend!
