When we got home from the zoo Thursday night, we tried a great new recipe to use some of the peaches we've been picking.




Chicken Breasts with Peach Salsa

Prep time:  15 minutes
Baking time:  30 minutes

4 servings - 4 to 5 ounces each

Salsa:
2 medium peaches, peeled, seeded, and diced
1 red pepper, seeded and diced
1green onion, diced fne
2 tablespoons lemon juice
1 teaspoon dried mint
1 teaspoon vegetable oil
3/4 teaspoon ground ginger
1/4 teaspoon ground red pepper


nonstick cooking spray
4 skinless boneless chicken breast halves

1.  Preheat oven to 400 degrees
2.  Combine ingredients for the salsa in a small bowl.
3.  Arrange chicken breasts in a baking dish that has been sprayed with cooking spray.  Pour salsa over the chicken, and bake for 30 minutes.



Easy and yummy, especially with all of the fresh produce we've been getting from the farmer's market.
